It was the owner Rick Rickenbach who first introduced shire residents to the delights of the ABC (Apple, Blueberry and Custard bun) and the legendary Beesting.
A unique twist to entertain customers is that the working area of the bakery is in full view.
“We would like to welcome our customers to interact with us and to see what we are doing,” said Rick.
“We set great value upon cleanliness right into every corner and crack of the business. We have nothing to hide.”
Adding to local culinary diversity with baguettes, potato bread, pumpkin seed and chia bread and more.
Plus unique to this area is the authentic soft pretzels. The quiche, which is always vegetarian, is quite famous already. For a weekend treat is one of their finest breads called Butterplait. Available just on Saturdays.

For the more adventurous, they regularly provide new tastes to try.
“We try to produce the best possible products and improve the ones we have,” says Rick.
Local produce is at the heart of their philosophy.
“For a long time the Bellingen Market had a slogan “Think global, act local,” said Rick. “We don't believe in global trade. We think it is important to support the local community.
“Why should we use products that are made overseas if we can get it locally? It supports the community and creates jobs and opportunities in our town and region.”
They are supported by a host of local suppliers and as well as a wonderful team, without whom, Rick says, it all would not be possible. He also credits his wife, Daniela, as an excellent pastry cook and the heart and soul behind the production.
So what’s next? There are some ongoing changes for another few months but will appear in a new light once finished. A renovation of the shop front will give more space for a new range of cakes.
