A man armed with a knife entered a service station on Ocean Parade, Coffs Harbour, about 4pm and threatened a staff member.
The staff member handed over cash and cigarettes to the man, before he fled the scene toward nearby bushland.
The employee was not injured during the incident.
Police are keen to speak with a man who might be able to help the investigation.
He is described to police as being of Caucasian appearance, about 170cm tall with dark hair. He was last seen wearing a white baseball cap, black hooded jumper and black pants.
